Sustainability is embedded in everything we do. Our ambition is to create dining experiences that respect both people and the planet, with responsible sourcing as a fundamental principle.
We source ingredients locally and regionally whenever possible, with a strong emphasis on Swedish produce, complemented by carefully selected suppliers to ensure seasonality, variety, and consistent quality. Shorter transport distances reduce emissions where possible, while maintaining freshness and traceability.
Our menus are flexible rather than fixed. They are shaped by seasonal availability and what is currently accessible through our suppliers, allowing us to prioritise Swedish ingredients when in season, make responsible use of available produce, and reduce food waste, without compromising on quality or creativity.
Thoughtful beverages and balanced meat choices
The same sustainability principles apply to our beverage selection. Our beverage selection includes organic wines, beer from local producers, and locally sourced apple juice, supporting regional suppliers and reducing environmental impact.
We reduce the amount of meat on each plate to lower our environmental impact. By giving vegetables, legumes, and other lower-carbon ingredients a more prominent role, we cut the carbon emissions associated with meat production.
The result is a dining experience that is thoughtful, contemporary, and well suited to an international audience, while retaining the essence of Swedish culinary tradition.
